My ratatouille

• 3 medium sized eggplants (aubergines) |
Heat the oil in a deep and thick pan. Peel, then slice the onion. Peel then chop the garlic. When the oil is warm, add onion, garlic, salt, pepper, turmeric (optional), ground thyme, cumin (optional) and herbs to the pan. Cover and lower the heat. Chop into cubes one eggplant (after having cut its stem), one zucchini (after having cut the stem), one bell pepper emptied of its seeds and one tomato. When done, add them to the pan, mix well, and cover again. Repeat twice for the remaining vegetables. Let cook for 35 minutes or so. Check regularly (it shouldn’t be overcooked, look at the eggplant pieces) and carefully mix the vegetables. |
